What Does Hanging Weight Mean?
Bulk beef is sold based on hot hanging weight. This is the weight of the carcass after processing but before the beef is dry-aged, trimmed, cut and packaged.
You will not take home the full hanging weight.
As a general guideline, customers can expect to take home approximately 60% of the hanging weight as packaged beef.
Example
A quarter beef weighing approximately 220 lb hanging weight may produce roughly 130–140 lb of packaged beef for your freezer.

Why 28-Day Dry Aging?
Our bulk beef is dry-aged for approximately 28 days before cutting and packaging.
During aging, some moisture is naturally lost. This is one of the reasons hanging weight and final packaged weight are different.
After aging, your beef is professionally cut, wrapped, labelled and prepared for delivery.
